
Preheat oven to 350 degrees F (175 degrees C).
Mix sweet potato, whole wheat flour, applesauce, flax seeds, and eggs in the large bowl until a dough forms. Turn dough out on a well-floured surface and roll dough to about 1/4-inch thick. Cut out shapes using a cookie cutter or cut dough into strips with a pizza cutter. Arrange cookies on an ungreased baking sheet.
Bake until crisp, 30 to 40 minutes. Removing to a cooling rack. Allow to cool completely. Store in an airtight container for up to two weeks.
