Farmers Cheese Pancakes

 1 Large Egg
 Zest of 1/4 of a Lemon
 1 tbsp Sugar
 3.50 fl oz Whole Milk
 Pinch of Salt
 7 oz Farmers Cheese, Crumbled (Curds)
 3.50 oz All-Purpose Flour
 1 tsp Baking Soda
 1 oz Unsalted Butter
 Sour Cream (for topping)
 Blackcurrant or other Fruit Jam (for topping)

Preheat oven to 250º F (120ºC).


Whisk the egg, lemon zest, sugar, milk, and salt together in a bowl. Add the curds and whisk again for 30 seconds, until well combined.


Sift the flour and baking soda over the curd mixture.


Melt half the butter in a large cast-iron or heavy-based non-stick frying pan over low heat (the cheese can burn easily, so make sure the heat is lower than for normal pancakes). Add two ladlefuls of approximately 3.5 oz of batter to form two individual pancakes and cook for 4 minutes, shaping them into circles as they puff up.

Flip the pancakes and cook for another 4 minutes.

Transfer the pancakes to the oven to keep warm, then repeat with the remaining batter. Serve with sour cream and jam!
