Chocolate Chia Seed Pudding

This is my favorite healthy dessert. Despite their small size, chia seeds are full of important nutrients. They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium.

Recipe: Chocolate Chia Seed Pudding

 0.25 cup Raw Cacao Powder
 1.50 cups Light Coconut Milk
 2 tbsp Maple Syrup
 0.50 tsp Vanilla Extract
 0.50 cup Chia Seeds
 Sea Salt

In a small mixing bowl, add cacao powder (sift first to reduce clumps), maple syrup, salt, and vanilla and whisk to combine. Then add a little coconut milk at a time and whisk until paste forms. Then add remaining milk and whisk until smooth.

Optional Step: Blend mixture in your NutriBullet or Blender. This helps to combine the ingredients and gives the pudding an extra creamy finish!


Add chia seeds and whisk to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it's achieved a pudding-like consistency). Give the mixture an extra whisk/stir once it has been in the refrigerator for 30-45 minutes.


Keep leftovers covered in the fridge for up to a week. Serve chilled with desired toppings, such as fruit or shredded coconut.
